The Jumbo Tiger Prawn is found in local waters and is the largest prawn in the world. It can grow up to 33cm and can be easily distinguished by the light and dark stripes on its tail.The Jumbo Tiger Prawn is very meaty and flavourful. The meat of the large ones can be tough if not handled properly.The white flesh is tinged with orange if cooked peeled and red if cooked in the shell.Meat should be slightly resilient and moist.
